People with university degrees may be happier in terms of having higher job opportunities, and from having been exposed to different learning environments and experiences.
After doing some research online however, more than one study suggests that actually those with post graduate degrees are even happier than those with a single degree. According to the 'World Happiness Report' published by the Sustainable Development Solutions Network (SDSN) those who were most unhappy were the people with no formal education whatsoever.
People with one degree however, may actually not be as happy as you imagine, because in today's world - competition for jobs is more fierce, and even though people have degrees, it may not be enough to guarantee them the job they are looking for. Perhaps thats why those doing postgrads are noted as being 'happier' as they have even more of a chance to get a job than their friend with a standard degree.
